Butter & Fresh Herbed Pasta with Caprese Salad
As a child I did not like tomato sauce on my pasta and my mother would prepare it with just butter. To this day it is one of my favourite was to enjoy pasta, it brings back fond childhood memories and is a comforting meal for me.
1 Cup cooked spaghetti
1 - 2 TBsp. salted butter
1 TBsp. fresh basil chopped
1 TBsp. fresh oregano chopped
1-2 TBsp. freshly grated Romano Parmesan cheese
2-3 turns of fresh ground pepper (optional)
1 medium tomato
3 slices of soft mozzarella cheese
1-2 turns of fresh ground pepper (optional)
Create the magic:
While pasta is cooking slice tomato into 3 slices and place on plate. Drizzle tomato slices with olive oil, add fresh ground pepper, top with a slice of soft mozzarella cheese. Top with a fresh basil leaf and drizzle with olive oil.
Once pasta is cooked drain water, toss pasta in pot with butter, add in fresh basil and oregano, blend together and add Romano Parmesan cheese.
Transfer pasta to plate. Drizzle tomato stacks with balsamic vinegar.
