Sourdough French Toast
If you follow me on instagram you may already know that I have fallen for Blackbird Baking Co - sourdough bread. And this past week-end I was inspired to use some leftover bread to whip up french toast... lovelies, it was beyond amazing!! The weather is expected to hit double digits below zero in Toronto, this weekend ... so why not pick up some sourdough bread for dinner and use the leftover for breakfast the next day.
4 slices of day old sourdough bread
6 large eggs
1 tsp. cinnamon
1 tsp. ground nutmeg
1 tsp. vanilla
1 Tbsp. milk
1 Tbsp. salted butter
powdered sugar - optional
fresh fruit sliced - optional (I used mango)
Pure maple syrup to taste
Create the magic:
Whisk eggs in a bowl - when well whisked, transfer to a shallow dish that will accommodate all four slices of bread. Add cinnamon, nutmeg, whisk vigorously until spices are well blended into egg mixture. Add vanilla and milk - whisk to blend.
TIPS: slightly press down on bread slices to help absorb more of the egg mixture. Any remaining egg mixture can be poured over the slices when you have them in skillet.
Heat a skillet over medium heat, add butter and let melt. Add egg mixture soaked bread slices in single layer. Cook each side until golden - approximately 1-2 minutes per side. Sprinkle with a dusting of powder sugar and serve immediately with pure maple syrup.
